Macs dont even start running fans until you hit >80C.

I think the correct terminology is “don’t start running the fans at high(audible) speeds till >80C.

Mine are running at 2k RPM ~40 C.

Mine runs at >6k RPM after 50-something Celsius.

It really depends on the model. My older MacBook Pros would idle at 2K RPM, while my new MacBook Pro can go all the way down to zero in the winter or with very few things open but generally stay at 1200 RPM during daily usage. All of these are silent, of course.

Depends on the model. The MacBook Escape (non-touchbar Pro) doesn't run fans at all at low temperatures. I actually thought it was broken when I first got it, but it's intentional behaviour.
